The Real Reasons People React to Dairy
1. A1 vs A2 Casein – The Protein Problem
Most commercial dairy comes from high-yield hybridised breeds like Holstein-Friesians and Ayrshires. These cows were bred to maximise litres, not quality.
They produce milk containing A1 beta-casein, a genetically mutated milk protein linked to:
- Inflammation
- Digestive distress
- Brain fog
- Immune responses (often mislabelled as “lactose intolerance”)
In contrast, ancient breeds like Jersey cows produce A2 beta-casein – the original, human-friendly protein. A2 milk is easier to digest and less likely to cause inflammation or immune responses.

2. Lactose Intolerance – What It Really Means
Only a small percentage of people have true lactose intolerance – a genetic inability to produce enough lactase, the enzyme needed to digest lactose (milk sugar).
Globally, estimates vary by population group (e.g., ~5–10% in Northern Europeans; up to 80% in some Asian communities).
You can test this via hydrogen breath tests or elimination and reintroduction protocols.
Mild lactose issues can often be managed by taking lactase digestive enzymes or by using fermented dairy like yoghurt or kefir (where the lactose is already broken down).

Never buy: Mass-farmed commercial dairy.
Bare minimum criteria: Choose organic dairy.
Better: Look for cows that are:
- Jersey breed — producing naturally creamy, A2 milk that is non-inflammatory and easier to digest.
- Pasture-raised and grass-fed — resulting in healthy animals eating their natural diet, producing milk with a superior nutrient profile, including higher omega-3s, conjugated linoleic acid (CLA), and beta-carotene.
Note: Grass-fed cows may receive some supplemental feed only during milking seasons. - Free from routine antibiotics, steroids, and hormones.
- Ethically farmed — cows are allowed to roam, graze, and live without stress.
Even better: All of the above plus fermented/cultured dairy (yoghurt, kefir, fermented cheeses) — these products support gut health by delivering beneficial probiotics and improving digestion.
The ultimate: All of the above but raw — raw dairy retains natural enzymes and immune-boosting properties lost in pasteurisation.
Note: Raw milk is best for most healthy individuals but may not be suitable for pregnant women, immunocompromised individuals, or cancer patients.

Different Dairy, Same Goodness: Why Some Choose Goat or Sheep Milk
While cow’s milk is the most widely consumed, many people find they tolerate goat or sheep milk far better – especially those with mild sensitivities. These milks contain lower levels of A1 beta-casein (or none at all), making them closer in composition to human breast milk, which can make digestion gentler and less inflammatory.
Goat and sheep milk also have smaller fat globules and more medium-chain fatty acids, helping them digest more quickly and efficiently than cow’s milk. Nutritionally, they’re naturally rich in calcium, phosphorus, and vitamin A, with sheep milk especially high in protein and beneficial fats.
