This yummy quick pudding recipe is a game-changer if you are wanting a healthy dessert that will support a clean healthy lifestyle. Not only is it absolutely delicious, it is super nutritious and will support your gut health as an added bonus. It is high in healthy fats – so a modest portion is more than enough and super satisfying. 

This pudding is very low in carbs so it is a great addition to a ketogenic diet.

Keep the basic ingredients in your fridge and/or pantry and you are always able to whip up a portion or two when you are needing a (subtle) sweet treat.

This is more of a concept than a fixed recipe so there is lots of room to play with flavours and experiment as per your taste preferences and what ingredients you have on hand.


Here is an outline the foundation ingredients and some alternatives you can consider first:

MACADAMIA NUT BUTTER

This creamy rich nut butter forms the foundation of this delicious pudding.

Macadamia nut butter is by far the healthiest option as far as nut butters go. 

Macadamia nuts:

  • are very nutritious 
  • have numerous health benefits
  • are high is very healthy fats
  • are very low in *antinutrients 

*Antinutrients are built in defence mechanisms in a plant to protect itself from being eaten causing digestive upset and gut damage in the predator. Macadamia nuts have negligible levels of antinutrients, unlike all other nuts, which are rich in at least one anti-nutrient (such as phytic acid, oxalates or lectins). 

Macadamia nuts are rich in nutrients such as fibre, proteins, healthy fats, potassium, phosphorus, calcium, magnesium, B-complex vitamins and vitamins A and E.

In addition to being a tasty nut, macadamia nuts have several health benefits such as fighting free radicals, improving intestinal function, lowers cholesterol, helping with weight loss, brain health and bone health. Also helps delay ageing and prevent diabetes and heart disease.

ALTERNATIVE: 

XCHANGE macadamia nut butter for a creamy nut butter of your choice. 

(Note: Peanut butter should be completely avoided. Peanuts are not nuts, but rather legumes that are loaded with anti-nutrients and are contaminated with carcinogenic Aflatoxin mould!)

CREAM

Thick Jersey milk cream (preferably from grass-fed cows), mixed in equal proportions with the nut butter to soften the nutty taste, add volume and smoothness to the pudding.

Jersey milk is also higher in nutrients compared to other types of milk. Studies have shown that Jersey milk contains more protein, calcium, and vitamin B12 than milk from other breeds of cows. Additionally, Jersey milk contains more beta-carotene, which is converted into vitamin A in the body. Jersey milk also has predominantly A2-casein protein in their milk – which is much easier to tolerate than milk from breeds of cows having A1-casein protein in their milk. 

ALTERNATIVE: 

XCHANGE dairy cream for coconut cream.

FLAVOUR

Add rich chocolate flavour with raw organic cacao powder:

Cacao is one of the highest antioxidant foods known to man; a rich source of magnesium and mood-enhancing brain chemicals, including PEA (phenylethylamine), anandamide, serotonin and dopamine. 

The benefits of cacao are said to be:

My go to sweetener with this pudding is inulin and here is why:

Inulin is a natural low-GI soluble dietary fibre which has a positive effect on the gut microbiome. 

In addition, inulin also exhibits excellent health benefits in regulating lipid metabolism, weight loss, lowering blood sugar, inhibiting the expression of inflammatory factors, reducing the risk of colon cancer, enhancing mineral absorption, improving gut motility, and relieving depression.

ALTERNATIVE: 

XCHANGE inulin for raw honey or debittered stevia to taste.

SEASON

Say what – season a pudding? Surprisingly, yes!

By adding a pinch of Celtic sea salt to your pudding; you will not only add a delightful salty crunch but you will enhance the sweetness of your sweetener – allowing you to use far less. Double bonus! The Celtic sea salt crystals are the perfect size and texture and also add to your mineral intake for the day.

ALTERNATIVE: 

XCHANGE Celtic sea salt for a pinch of cayenne pepper for a “chilli-chocolate” take on this pudding with added healing benefits!

  • 1 tbsp thick jersey milk cream preferably grass-fed
  • 2 tsp cacao powder preferably raw organic
  • 1 tsp inulin
  • 1 pinch celtic sea salt

Instructions
 

  • Mix all the ingredients in a small serving bowl and enjoy – easy as that!
