Fresh garlic cloves: Packed with antioxidants, garlic supports immunity and reduces inflammation.

I’ve been making this roasted leg of lamb recipe for years, refining it to perfection. It’s incredibly flavourful, cooked low and slow until the meat falls off the bone. Serve it with your favourite clean sides like roasted vegetables, baby potatoes, or a fresh Greek salad for a wholesome meal. The leftovers are just as amazing – reheat them for quick, nourishing lunches or freeze them in portions for an easy, guilt-free “convenience” meal. Fall Off The Bone – Roasted Leg of Lamb Perfection!

A tender, fall-off-the-bone roasted leg of lamb recipe that's bursting with flavour! Slowly roasted in the oven to perfection with simple clean ingredients. This recipe is easy to make and perfect for any occasion or just for a nourishing clean meal prep protein solution.

Equipment

  • 1 Chopping board
  • 1 knife
  • 1 kettle
  • 1 glass measuring cup
  • 1 large deep roasting pan preferably stainless steel, glass or ceramic with own lid (avoid non-stick toxic pans)
  • 1 Oven
  • 1 pot optional if making a gravy
  • 1 stick blender optional if making a gravy
  • 1 sieve optional if making a gravy

Ingredients
  

  • 2.6 Kg leg of lamb on the bone free-range / pasture-raised
  • 8 sprigs fresh rosemary optional
  • 3 tbsp clean herbal salt rub
  • 10 cloves fresh garlic
  • 2 big carrots preferably organic
  • 2 big onions red or white
  • 5 sticks celery optional only if you can get organic
  • 1 litre vegetable or chicken stock made with boiling water preferably clean and organic with no additives
  • quality salt to taste (if needed as the rub should be sufficient)
  • freshly ground black pepper preferably organic
  • 1 tbsp arrow root powder optional if you want to make a gravy (this is a clean thickening agent swap instead of GMO Bisto or Maizena

Instructions
 

  • Preheat the oven to 200 degrees celsius / 392 degrees fahrenheit
  • Peel and chop your carrots into even sizes pieces.
  • Peel and chop your onions into event size wedges (almost the same size as your carrot pieces).
  • If you choose to add celery – also chop into similar size pieces.
  • Lay all your chopped vegetables and half your rosemary sprigs in your roasting pan to form a "bed" for your lamb so it does not stick to the bottom of your pan.
  • Peel your cloves of garlic and slice into quarters/wedges long ways.
  • Place your leg of lamb on your chopping board and with a sharp nice score the fat layer into a grid pattern. Do not score too deep into the pink flesh.
  • Stab holes all over the lamb and push your garlic wedges as deep into the flesh as possible.
  • Coat the leg of lamb well with the herbal salt rub & black pepper to taste and place it on-top of the bed of vegetables.
  • Prepare your stock with boiling water and pour into into the roasting pan just covering the vegetables.
  • Pop your roasting pan in the oven (uncovered / with no lid) for 30 minutes to crisp up the fat.
  • Remove the roasting pan from the oven, place the rest of your fresh rosemary sprigs on top of the lamb and cover with your lid (or tin foil shiny side down – but make sure the foil does not touch your meat as don't want aluminium toxicity contaminating your meal at all!) Reduce the oven temperature to 150 degrees celsius / 302 degrees fahrenheit and pop back in the oven.
  • Slowly roast your lamb covered for at least another 3.5 hours or until it falls off the bone. Be sure to baste with the stock/fat drippings every hour. The longer it cooks the softer it will get. The quality of the cut and the age of the lamb will affect the tenderness and cook time required.
  • When done remove from the oven and transfer your meat to another container to rest for at least 15 minutes before serving. During this resting time you can optionally choose to make a gravy.
  • To make a gravy – transfer the fat drippings, stock and vegetables into a pot and bring to a simmer. Scoop your arrow root powder into a cup and add cold water to form a paste. Add the paste to the pot and stir until it thickens. Optionally strain out the vegetables and discard or serve with your meal or you can blend them into your gravy with a stick blender to add more body, flavour and nourishment. Strain through a sieve if you prefer a smoother texture. Season to taste.
  • Carve your meat, plate and serve with your preferred sides and optional gravy.
  • Enjoy! It is going to be AMAZING!

Notes

If you want to serve this meal around 1pm for lunch – start your preparations at 7am to be safe so you are ready perfectly in time!
