This recipe holds a special place in my heart. It began as a long-standing family favourite – a classic Quiche Lorraine my mom used to bake, filled with the rich flavours of bacon, onion, and cheese, baked into a golden, creamy perfection. It was always a winner at family gatherings and never failed to satisfy our guests. Over the years, I’ve adapted and refined this beloved recipe, transforming it into a crustless, gluten-free version that still delivers on its fail-proof texture and mouthwatering flavour.

What I love most about this quiche is its versatility. While the original bacon, onion, and cheese combination remains my firm favourite – especially when I can source nitrite-free, pasture-raised bacon – you can switch up the fillings to suit your mood or what’s in season. From shredded chicken and feta to a festive spinach and feta mix, the possibilities are endless.

Another exciting twist? This recipe can easily be made dairy-free! By swapping out the traditional cream and milk custard base with boxed coconut milk (and a sneaky dash of nutritional yeast to neutralise the coconut flavour), the texture and taste stay just as indulgent and satisfying. Whether you bake it in a conventional oven or an air fryer, this quiche always comes out perfectly.

Why I Switched to Crustless

While I adored the original recipe, going crustless opened up a world of benefits. It’s quicker to make, gluten-free by nature, and perfect for those who prefer lighter, lower-carb meals. Plus, the custard and filling combination is so rich and flavourful that you won’t miss the crust at all!

Customising Your Quiche

The beauty of this recipe lies in its flexibility. Here are some of my favourite filling combinations:

  1. Classic Quiche Lorraine: Bacon, onion*, and cheese.
  2. Shredded Chicken Delight: Chicken breast, onion*, feta, peppadews, and cheddar.
  3. Asparagus & Mushroom: Asparagus, onion*, mushrooms, feta, and cheddar.
  4. Goat’s Cheese & Sundried Tomato: Goat’s cheese, sundried tomato, butternut, onion*, and cheddar.
  5. Festive Spinach & Feta: Spinach, onion*, feta, and cheddar—a perfect touch of green for holiday meals.

(*Onion is optional and can be omitted if you prefer.)

Filling Tips:

  • Precook and cool your fillings to avoid a soggy quiche.
  • Use less rather than more – overloading the fillings can throw off the balance of the custard.
  • For bacon, opt for streaky or back bacon with minimal fat. Cook it until tender but not crispy for the perfect texture.

A Note on Bacon and Ingredients

If you’re including bacon, make sure it’s nitrite/nitrate-free and ideally pasture-raised. Conventional bacon, while delicious, often contains harmful additives and comes from animals raised in inhumane conditions. Nitrites, in particular, have been linked to health concerns, so it’s worth sourcing cleaner alternatives for your health and peace of mind.

The Perfect Custard Base

The custard is the heart of any good quiche, and getting the egg-to-dairy ratio just right is key. The original recipe uses a 50/50 blend of full cream milk and cream for a luxuriously silky texture. For a dairy-free option, boxed coconut milk is an easy swap, with nutritional yeast added to mask any coconut flavour. Trust me, you won’t even notice the difference!

Baking Dish Tips

  • For the best results in a conventional oven, use a 2.1 Litre rectangular glass or ceramic dish – both options are food-safe and ensures the quiche doesn’t stick to the sides.
  • To bake in an air fryer, divide the mixture into three smaller 700ml square dishes for even cooking.
  • For festive canapés, bake in a large dish, cool completely, and cut into bite-sized squares.

A Word on Bakeware Safety

If making mini quiches, avoid non-stick metal trays as they often contain Teflon, which can release harmful chemicals when heated. Instead, opt for ceramic tart trays or bake as a single large quiche and portion it out. Similarly, avoid aerosol sprays like spray-and-cook, which often contain unhealthy propellants – simple greasing with a healthier fat is a better choice.

Keto Crustless Quiche That’s Always a Hit

A versatile, crustless quiche recipe that’s gluten-free, keto-friendly, and easily adaptable to be dairy-free. This family favourite delivers a perfectly creamy custard base with endless filling options, from classic Quiche Lorraine to festive spinach and feta. Simple, fail-proof, and utterly delicious!

Equipment

  • Oven (or air fryer)
  • medium mixing bowl
  • glass or ceramic baking dish
  • grater
  • Chopping board
  • knife
  • frying pan

Ingredients
  

  • 2 medium white onions optional
  • 200 g grated mature cheddar
  • 120 g feta or goats cheese (2 disks)
  • 1 tbsp avocado oil butter or gee
  • 1 cup other filling of choice diced bacon, roasted butternut, fried mushroom, steamed asparagus, shredded chicken breast, sun-dried tomato, etc…
  • 6 jumbo eggs preferably free range / organic / pasture-raised
  • 500 ml 1/2 fresh cream + 1/2 full cream milk or boxed coconut milk with 1 tbsp nutritional yeast (as a dairy-free substitute)
  • salt & black pepper to taste
  • 1 tbsp coconut oil for greasing your dish

Instructions
 

  • Pre-heat your oven to 190 degrees celsius (or air fryer to 180 degrees celsius)
  • Grease your baking dish with 1 tbsp coconut oil using a paper towel
  • Fry, roast or steam your 1 cup other filling of choice (until tender but not over cooked, nor crispy)
  • Dice and fry your 2 medium white onions in 1 tbsp avocado oil (or butter or gee) until translucent
  • Grate your 200 g grated mature cheddar
  • Chop your 120 g feta into small 1cm cubes
  • Whisk together your 6 jumbo eggs, 500 ml 1/2 fresh cream + 1/2 full cream milk, salt & black pepper
  • Divide/spread your 1 cup other filling of choice in your baking dish
  • Divide/spread your cooked onions over the other fillings
  • Divide your feta and cheddar over the other fillings
  • Divide your egg custard over the fillings equally
  • *For 1 big quiche : Bake in the oven for approximately 30 minutes (190 degrees celsius)
    *For 3 x smaller quiches : Bake in the air-fryer for approximately 15 minutes (180 degrees celsius)
    *For mini tartlet tray: Bake in the oven for approximately 20 minutes (190 degrees celsius)
    (Until golden brown on top and a sharp knife comes out clean)
  • Allow to cool slightly before serving

Notes

If you want to enjoy and reheat later – I recommend you under cook the quiches slightly (Cook through to set but don’t allow to go golden brown).  Otherwise they will be too dry when reheated.

Pairs well with a fresh salad and an acidic dressing
